Recipe: Blueberry Pancakes

Today is also the anniversary of when we got engaged (Teresa needed to pick a date I’d never forget ) on to the food.



Breakfast for dinner anyone? How about some homemade blueberry pancakes? We love eating breakfast food for dinner and blueberry pancakes are a household favorite. If blueberries aren’t your thing you can go plain or use other fresh fruit or chocolate chips. This is a delicious, quick and easy recipe that can be whipped up in about 10 minutes with ingredients kept in most pantries. So…throw away those boxed mixes and start enjoying pancakes from scratch.

Shopping List:

  • 2 cups of AP flour (just regular everyday flour)
    ¼ cup granulated sugar

  • 1 T baking powder

  • ½ t salt

  • ¼ t baking soda

  • 1 T vanilla

  • 1 ¾ cup milk

  • 4 T or ¼ cup melted butter

  • 2 eggs

 
 

How To:

STEP 1: Combine and mix all your dry ingredients in a large mixing bowl and mix all your wet ingredients together in a separate bowl.

STEP 2: Form a depression in the middle of the dry ingredients bowl for your wet ingredients. Pour wet ingredients into dry ingredients and mix until combined but do not over mix, some small lumps are fine.

STEP 3: Place ½ cup batter into hot skillet or griddle for each pancake. Put desired amount of blueberries and cook until bubble start to form. Flip and cook until blueberries start to crackle and pop. Remove from pan and top with butter and syrup or whipped cream and fresh blueberries.

STEP 4: If you want to make something fun for the kids you can skewer some sausage links, dip in the batter and deep fry. They come out looking like a corn dog and are sure to be a hit with your kids…they were with our 25 year old.
