Recipe: Fish & Chips
We’re back! Your favorite Realtor and mortgage professional with this weeks Fun Food Friday. Hard to believe it is Friday already, however you know what that means…It’s time for some FOOD!
I have received a lot of suggestions to do a “Fun Food Friday “ fish-n-chips edition. I did do this in the past, featuring a different place each week for a good Friday fish fry. Most restaurants offer their fish-n-chips on Fridays - most in an “all you can eat” special. Of course you can always find a place to get it to go, like Primos who offers a 10 piece fried cod with fries and slaw for around $25… in my opinion it is the best deal around. However…how about making your own at home?
Shopping List:
Fresh cod filets, cut into 3-4 ounce portions
Fresh potatoes, scrubbed clean if leaving skin on like we did.
1 c Flour
1 tsp salt
½ t pepper
1 ½ t each granulated or powdered garlic and onion,
1 T paprika
1 t seasoned salt
¼ c corn starch
1 egg (slightly beaten)
Bottle or can of beer
For deep frying your fish you will need either a tabletop fryer, a deep pan or skillet to fry and a large bottle of canola of vegetable oil…Sorry this is not an air fryer recipe.
STEP 1: Start by cutting the potatoes into the size fries you prefer. I like them thinner and Teresa likes them thicker so we made both. Place cut fries in a bowl of water, to pull some of the excess starch out of them. You can refrigerate them if you prep them more than an hour in advance. After soaking for at least 30 minutes, drain and rinse the potatoes and pat dry with paper towel. Heat oil to 300 degrees F and cook fries for 3 minutes. Remove from oil and place on paper towel lined sheet tray. This can be done ahead of time and I find it best to refrigerate them to cool them off before refrying them.
STEP 2: Pat fish pieces dry with paper towel, season with salt and pepper and toss in corn starch to evenly cover each piece and set aside. To make batter stir together flour, seasoned salt, granulated garlic, granulated onion and paprika. Whisk in beaten egg and gradually add beer (8-10 ounces) until batter is no longer lumpy and the consistency you desire. Heat oil to 375 degrees. Cook fries until golden brown, remove form oil and place back on sheet tray and put in the oven or toaster oven at 350 to keep warm.
STEP 3: Dip fish into batter and place in oil heated to 375 degrees. Cook 3-4 minutes (maybe longer with larger pieces) until golden brown. Remove from oil and place on wire rack. Remove fries from the oven and fry a 3rd time for 1 minute to crispen them up. Remove from oil, season and enjoy with your fish.
