Recipe: Chicken Quesadillas
It’s Keith your favorite Realtor, and lover of all foods, back again for this week's Fun Food Friday. Keeping with the quick and easy things to make at home this week, we are making Chicken Quesadillas. These are something we have often in the Becker household. They are quick, easy to make and most of all delicious!
Shopping List:
1-2 lbs boneless skinless chicken breasts
Flour tortillas (we use medium burrito size)
1 medium onion diced
1 can black beans, drained and rinsed
Diced red or green pepper (optional)
Sliced avocado (optional)
Shredded Mexican blend cheese
Salt
Pepper
Taco seasoning (if you don’t have taco seasoning any southwest style seasoning will work)
Canola or olive oil
How To:
STEP 1: Season the chicken breast with salt, pepper and taco seasoning. Put in a Ziploc bag with oil, place in refrigerator and let marinade. This can be done a day ahead of time but an hour is sufficient. These can be cooked on the grill or in a sauté pan. I prefer the grill weather permitting. Once cooked dice and set aside and add a little additional seasoning.
STEP 2: In a large sauté pan or griddle, place your flour tortilla and add cheese to half of the tortilla. It’s cheese, so use as much or as little as you want. Add about ½ cup diced chicken (more or less depending on your taste) onions, black beans and top with more cheese. Fold tortilla in half and flip. It is important to use cheese on the top and bottom as it acts as the “glue” that holds everything else in place. Continue to flip back and for the until both sides are browned to your liking. Once you get a feel for it you can do 2 at a time in the pan.
STEP 3: Remove from pan and cut into thirds. Serve with salsa, guacamole and sour cream if desired. We also made a queso dip to go with ours. Like I said simple and delicious.
